West Coast IPAs lean on bittering hops (alpha acids) and traditional hop aroma — pine, citrus, dank — that's slightly more stable than the volatile thiols in NEIPAs. The higher hop bitterness also masks early oxidation flavors better. Still, the aromatic top notes fade noticeably within 6-8 weeks. After 90 days, the beer leans flat and cardboardy.
Refrigerate when possible. Cans handle warm storage better than bottles thanks to total light exclusion. Like all hoppy styles, avoid temperature cycling. A consistent 50°F garage holds up better than a fridge that gets warm-cycled.
Within 6 weeks for peak character. Drinkable through 3 months but expect noticeable fade. Past 5 months you're drinking a different beer.
